Sébastien Bureau
Founder and president of Mannanova, Sébastien is always busy concocting something or other. Since a young age, he has devoted many hours in the kitchen, experimenting with ingredients and exploring flavours & techniques. With a background in Chemistry and Biology, Seb has continually honed his passion for Food Science. He spent several years as VP of R&D for the biggest Kombucha company in Canada and played a critical role in its growth phase. He’s the man with the plan, and hopes to extend his wealth of knowledge to producers of ecological & sustainable foods and beverages.

Eduardo Fonseca Arraes
Vice-President and responsible for business development, warehouse logistics and finances, Eduardo is an expert in managing stuff and is a D&D dungeon master. He worked for many years managing International Cooperation and Environmental projects for the Brazilian government, NGOs and the United Nations. Passionate by craft food and beverages, Ed decided to join forces with Sébastien in order to manage Mannanova, develop new business ideas and help people around the world succeed.

Thomas Durant
Director of production, Thomas has been honing his knowledge and skills in the food industry for the last 10 years. He worked alongside Sébastien for Canada’s largest kombucha producer, and now the two have joined forces with the goal of creating a thriving international kombucha community. When he is not brewing kombucha he has his hands full with other production related activities. His mandate is: use his experience to help others make the best possible product for the public to consume.

Amanda Weekes
With a notable experience in industrial cleaning, Amanda assists our Mannanova brewers with the production of kombucha and Manna-K and makes sure everything is clean and proper. Amanda is a hardworking individual who is always ready to tackle any task.

Nathaly Pinto
Nathaly is our Quality Assurance Manager with the noble function of ensuring that our operations and products are always conform. She worked for several years with cocoa and chocolate producers in Ecuador to develop their products and improve local production. Nathaly also develop new products and new flavors for our clients.

Daniel Nahmias-Léonard
Daniel is here to help make your kombucha dreams come true! Working with current and prospective clients, he'll make sure you have the resources and confidence to move forward on your personal kombucha journey. With past experience in communications and tech entrepreneurship, he's happiest when helping people like you! Also of note: he's in an ongoing flag-off competition with Eduardo.

Joseph Oliver
Joe has a long history working in restaurants across Canada and is a food passionate. A talented chef that chose to switch his weapons: laying down his knifes to take our tanks (well, fermentation tanks). Joe assists the production team with his unparalleled strength and love for gangsta rap to brew delicious products every day, cleaning and sanitation.

Martin Handfield
Martin is our Production coordinator. He has spent his life doing freeze drying and specializing in a large scale probiotics fermentation for a Québec based international company. Martin support’s us in serving more customers while maintaining our corporate values.

Tristan Bonin-Giust
Tristan is one of our trusted brewers. He completed his brewer training at Cégep de Jonquière in Microbrewery Production and joined our team after working for a few years in beer breweries. He is passionate about good food, but much more passionate about craft beers. When he's not working, you'll find Tristan as an active blogger/archivist in the local hip hop community
